Substitutions and Cooking

Substitution Solutions adapted from
Living Without Magazine

Milk
Replace 1 cup cow's milk with one of the following:
1 cup soy milk (plain)
1 cup rice milk
1 cup fruit juice
1 cup water
1 cup coconut milk
1 cup goat's milk, if tolerated
1 cup hemp milk
1 cup almond milk

ButtermilkReplace 1 cup buttermilk with one of the following:
1 cup soy milk + 1 tablespoon lemon juice or 1 tablespoon white vinegar (Let stand until slightly thickened.)
1 cup coconut milk
7/8 cup rice milk
7/8 cup fruit juice
7/8 cup water

Yogurt
Replace 1 cup yogurt with one of the following:
1 cup soy yogurt or coconut yogurt
1 cup soy sour cream
1 cup unsweetened applesauce
1 cup fruit puree

Butter
Replace 8 tablespoons (1 stick) butter with one of the following:
8 tablespoons (1 stick) Fleischmann's unsalted margarine
8 tablespoons Earth Balance (Non-Dairy) Buttery Spread
7 tablespoons Earth Balance (Non-Dairy, Non-Soy) Buttery Spread
8 tablespoons Spectrum Organic Shortening or Jungle Shortening or Crisco (not my 1st choice)
8 tablespoons vegetable, canola or olive oil
7 tablespoons coconut oil

For reduced fat:6 tablespoons unsweetened applesauce + 2 tablespoons fat of choice

Evaporated Milk
Canned coconut milk (thicker than the drinkable kind)
Or simmer rice or almond milk until 1/2 it's volume

1 cup milk
= 1 cup water or fruit juice plus 1 tablespoon oil or shortening

= 1 cup soy, rice, or nut drink (milk substitute)

= 1/2 cup milk substitute + 1/2 cup water

= 1/2 cup juice + 1/2 cup water

1 cup milk (for baking)= 1 cup water + 2 tablespoons milk-free margarine

1 cup buttermilk = 1/2 cup milk substitute + 1/2 cup water + 1 tablespoon vinegar or lemon juice

light cream = milk substitute

heavy cream = milk-free whipping cream or meringue

cream cheese = mayonnaise

Sour Cream
 = mayonnaise + 1 Tablespoon sugar

market foods that are dairy free, 250 dairy-free recipes, and
a whole bunch of helpful tips.
